Serves 1
1/4 lb. imported fettuccine (or fresh)
2 oz. extra virgin olive oil
2 oz. white wine
1 clove of garlic, sliced
6 ea. quartered artichoke hearts (either in water or in marinade)
Salt and pepper to taste
1 Tbl. parsley, chopped
1/2 Tbl. basil
6 ea. shrimp (*P & D 21-25)
Red chili flakes (optional)
Approx. 6 ea. slices roasted red bell pepper
2 lemon slices
1 tsp. butter
In sauté pan, add olive oil and garlic, when garlic is lightly brown add shrimp. Add salt & pepper and red chili flakes. Toss together until color comes to shrimp. Add white wine and continue to cook for approx. 1 minute, add peppers, artichokes, lemon slices, butter and herbs. Sauté together for one minute. Add pre-cooked fettuccine, toss together and serve.
