1 potato peeled and diced
Half pound of diced fresh green beans (Haricot Vers are a great selection)
1 lb. dry linguini pasta
Salt and Olive Oil
Finely ground Parmesan*
Bring large pot of water with salt and one tablespoon olive oil to boil. Add dry linguini and cook approximately 8-10 minutes until just firm. When pasta is nearing complete (1-2 minutes left) add in potato and beans. Strain pasta, potato and beans and reserve two tablespoons of pasta water. Turn on big sauté pan until hot and add two heaping tablespoons of pesto mixture per person – turn off heat – add pasta and a little pasta water and toss. Serve on a large platter. When tossing pesto and pasta, Parmesan may be sprinkled on top to adhere pesto to pasta.
