Olive Oil Cake

3 Eggs
2 1/4 Cups granulated sugar
1 1/2 Cups extra virgin olive oil
1 1/2 Cups milk
Grated zest of 3 oranges
2 1/2 Cups unbleached all purpose flour
1/2 tsp baking powder
1/2 tsp baking soda
Pinch of salt

Directions

Preheat oven to 350 degrees.
Butter and flour a 12-inch cake pan

In a large bowl, whisk together the eggs and the sugar until blended. Add the olive oil, milk and orange zest and mix well. In another bowl, stir together the flour, baking soda, baking powder and salt. Add dry mix to egg mixture, stirring until just blended. Do not over mix. Pour the batter into prepared pan.

Bake 50 to 55 minutes, until a toothpick inserted to the center comes out clean. Remove to a wire rack and cool completely.

Loosen sides with a knife and invert onto a serving plate. Dust the cake with powdered sugar and cut into 12 slices.
